Aloo Baingan Masala

Aloo Baingan Masala is a flavorful and popular vegetarian dish from North India that can be easily made in your Instant Pot. Here's the recipe:

Ingredients:

  • 2 tablespoons of oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon of grated ginger
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of mustard seeds
  • 1 teaspoon of coriander powder
  • 1/2 teaspoon of turmeric powder
  • 1/4 teaspoon of cayenne pepper
  • 1/2 teaspoon of garam masala
  • 1 large potato, peeled and diced
  • 1 large eggplant, diced
  • Salt to taste
  • Chopped cilantro for garnish

Instructions:

  1. Turn on the Instant Pot and select the sauté function. Add the oil and allow it to heat up.
  2. Add the cumin seeds and mustard seeds to the Instant Pot and sauté until they start to pop.
  3. Add the chopped onion, minced garlic, and grated ginger to the Instant Pot. Sauté for 2-3 minutes until the onions are translucent.
  4. Add the coriander powder, turmeric powder, cayenne pepper, and garam masala to the Instant Pot. Stir well.
  5. Add the diced potato and eggplant to the Instant Pot and stir gently to coat them with the spice mixture.
  6. Close the Instant Pot lid and set the pressure release valve to the sealing position. Cook on high pressure for 5 minutes.
  7. After the cooking time is up, allow the pressure to release naturally for 5 minutes, then manually release any remaining pressure.
  8. Open the Instant Pot and stir in salt to taste.
  9. Garnish with chopped cilantro and serve hot with rice or roti.

Your flavorful and aromatic Aloo Baingan Masala is now ready to be enjoyed!

My Verdict:

Delicious!!
